{I am so far behind on posts! Little man wants to show off his Halloween costume and I cant wait to unpack some neat happenings from Thanksgiving...but for now...a new favorite recipe :)}
Mr Andrew LOVES pumpkin and granola bars and with his allergy to tree nuts it's tough to find treats with no nuts so we made our own and they were GREAT! :)
Ingredients:
3/4 cup canned pumpkin
1 egg
1/4 cup butter at room temperature
1/4 cup honey
2 tbsp molasses
2 cup rolled oats
1/2 tsp ground cinnamon
1/2 tsp nutmeg
{I added milled flaxseed, chopped peanuts {yes he can eat them! :)}, and a hand full of raisins}
Optional add ins:
1/2 cup sunflower seeds
1/2 cup chopped walnuts
2 tbsp shredded, unsweetened coconut
Directions:
Blend the pumpkin, egg, butter, honey, and molasses in a mixing bowl or food processor.
Add the oats, cinnamon, and extras; mix well.
Spread this mixture into a lightly greased jelly-roll type of pan.
Bake in a 350*F oven for 40 minutes or until golden brown. While still warm, cut into bars.
For very crisp bars, remove from pan to wire rack and cool completely.
